El queso se llama Halloumi. Es popular en todo el mundo. Panteli utiliza leche de oveja. La oveja es una oveja hembra. Su leche tiene un sabor diferente. Panteli no hace mucho queso, pero a la gente le encanta. La mayoría de los ganaderos utilizan leche de vaca. Dicen que la gente de todo el mundo prefiere la leche de vaca.
A los granjeros les preocupan las nuevas normas. Las retrasan. Las nuevas normas llegarán en 2029. Algunos ganaderos quieren cambiar el queso. Pero Panteli dice que no. Quiere mantener viva la tradición de Chipre.
